We have an exciting opportunity for a Diet Chef to join an Alton catering team.

39 hours per week including alternate weekends
Term time plus 3 weeks in the holidays

As a Diet Chef you will be responsible for the organisation, preparation and cooking of meals as specified by a Dietician. This will involve creating and adapting recipes to create dishes with modified textures. Researching new methods and recipes will be important as well as sharing best practice with other professionals and customers.

The successful candidate will be qualified to City & Guilds 706/1 & 706/2 or NVQ/QCF Professional Cookery level 1 & 2 and have experience in a commercial catering environment.

All candidates will need to be able to work as part of a team and should possess excellent communication skills. The ability to produce food items to a high standard and good presentation is essential. It would be advantageous to have experience of complex diets, but training will be provided for the best candidate.

KEY TASKS:

Preparing, cooking, blending and moulding food as required by students on specialist diets and modified textured food.
Liaising with Head Chef and Dietitian for the production of special diets
Liaising with the Catering Administrator to ensure appropriate information is received for diet labels, diet summery sheets and special menus
Creating and adapting recipes from the existing menus to create dishes with modified textures
Researching and trying out new methods, innovations and recipes
In conjunction with Head Chef and Dietitians liaise with students and parents, where appropriate, over specific dietary requirements
Share best practice and be willing to demonstrate cooking to other professionals and customers
Liaise with and work closely together with kitchen team on production of main meals to be used in special diets
Modifying or adjusting food as requested by students (e.g mincing meals cooked by students in home economics)
Attend a weekly meeting with the Dietitian and Head chef as required
Working closely with front of house to ensure correct delivery of meals
Responsive to customer feedback
Ability to deal with changing needs and requirements

Food Hygiene

Responsibility for compliance with The Food Hygiene Regulations and procedures in particular this refers to.

Adhering to all temperature control procedures during preparation, cooking and service of food, using Monika Management System for recording of all temperatures.

Correct storage and handling of food items using HACCP system of management.

Following good working practices using HACCP system of management.

Preparation, cooking and service of food items to a high standard following recipe guidelines and as directed by the Head Chef

Maintaining high standards of cleanliness and hygiene, both personally and by working in a clean, tidy, hygienic manner

Wearing clean, appropriate protective work wear at all times

General Duties

Participation in departmental training sessions as directed by the Catering Manager

Adherence to Health and Safety Regulations and procedures

Adherence to the daily and weekly cleaning tasks as directed by the Head Chef

Other duties

As a responsible position the Diet Chef maybe required to go on shift or assist with normal chef duties at short notice. This will be directed by the Head Chef Supervisor.
